In the Gedeo zone of southern Ethiopia, 2,040 smallholder farmers from the village of Koke deliver their backyard-grown harvests to the Koke Shalaye washing station, where coffee is grown in harmony with nature — organically, thanks to native landrace varieties that naturally enrich the soil and fend off pests.
This black honey processed lot is made from a small-bean variety known for its elevated acidity and dense, complex fruit, all amplified by high growing altitudes. After hand-picking, cherries are fermented for 48–72 hours, then dried on African beds for up to 21 days with careful rotation for even drying.
Owned by Abreham Mengiste, the station was established in 2019 and has earned accolades, including recognition from the African Taste of Harvest competition. With meticulous processing and a whole lot of care, this cup delivers layered fruit, clarity, and a wild side worth savouring.
